Strawberry Crepes
|
 |
Crepes:
2 large eggs
1 ¼ cup Milk
1 cup flour
3 T olive oil
3 T Powdered sugar
1 T vanilla or 2 T of liqueur of choice.
Topping:
10 strawberries sliced ¼ inch thick
½ cup powdered sugar
1 cup water
½ stick butter
2 T corn starch
|
Combine all ingredients for crepes in a blender and pulse for
10 seconds. Let batter set for 30 minutes.
Heat an 8 inch pan over low heat, coat with a small pad of
butter. Put ½ cup of batter in pan and swirl. Cook for about 30
seconds then flip for another 15 seconds. Repeat until all
batter is gone. Use paper towels to keep crepes separate.
Crepes should be a golden brown color. Fill with straight
strawberry cream cheese. Roll up and place on serving platter.
For topping, combine butter and sugar in pan and heat until all
sugar is melted into butter. Add water and corn starch. Stir
until blended. Add strawberries and cook just until soft. Spoon
over crepes and serve. Add whipped cream and chopped nuts if
desired.
Serves 6 to 8.
